Asparagus Festival in Tavagnacco

Did you know that the White Asparagus of Friuli-Venezia Giulia is one of the many excellent products of our region? It is certainly a centuries-old tradition, but the first definite traces of it date back to the Austro-Hungarian Empire: the story goes that Empress Maria Theresa of Austria was very fond of it and so she encouraged its trade as far as Vienna (Is this why in Friuli-Venezia Giulia you can always find Austrians who come to buy this excellent product?).
In Friuli-Venezia Giulia, Asparagus is the main product in spring. Between the end of April and the first half of May, it becomes the star of many menus and three festivals in Tavagnacco, Fossalon di Grado and Gorgo di Latisana, the areas that are most dedicated to its production. 
 
Let's start with the oldest Asparagus Festival in Tavagnacco, which started back in 1935. Every year, in the local sports field, white marquees pop up, where you can enjoy excellent asparagus, in every manner, accompanied by selected wines, all the pride of our region.
 

Each festival has its own special dishes: in Tavagnacco, I recommend San Daniele Cured Ham, with canapés and cream of asparagus, asparagus soup and a delicious Frico (potato and cheese dish), always made with asparagus. And don't miss Polish-style asparagus, made of sieved eggs seasoned with a sprinkling of Parmesan cheese. WONDERFUL!
