L”Oro Rosso” in Attimis

To bring saffron to Attimis, taking care of all the cultivation phases, from soil preparation to drying, and finally, selling directly to the consumer. This is the ambitious project launched by Fabrizio Martinuzzi, a young local farmer full of creativity, innovative ideas and a great desire to do things well. Fabrizio runs the family farm based in Attimis and has many brilliant and ambitious projects, and above all, great passion. After doing some research on the most suitable crop to enhance the territory of Attimis, he decided to concentrate his efforts on cultivating the so-called “red gold”: saffron in pistils in a small plantation that this year produced its first precious grams.
An important result, considering all the difficulties of the production process and the many unknowns that characterize every new entrepreneurial “adventure”.
In the “Martinuzzi” farm, the whole cultivation process of saffron is carried out by hand so as not to ruin the product. Between October and November, the harvest is done at dawn when the flowers are still closed; the pistils are then detached one by one subsequently dried within a particular natural process that preserves their taste and properties.
