Sauris: the kingdom of flavours in the mountains

What to do after a pleasant walk in the mountains amid lakes, forests and breathtaking views? I have no doubt: a tasty snack, preferably with typical products of the place where I happen to be. Sauris, in the heart of Carnia (and I've already been there) is the right place. Here we find excellent hams and excellent malga cheeses, accompanied by a high-quality craft beer, produced at 1400 m asl. The spectacular lake of Sauris at sunset, seen from the dam. There are two main ingredients and protagonists of this explosion of taste: the first is the mountain air of the highest municipality in Friuli Venezia Giulia. The second is passion and attention to detail. A characteristic that only someone who loves his work can have, succeeding in some way to transform this into quality in the products he creates, giving exquisite emotions to those lucky enough to taste them directly here in Sauris. In particular, I was struck by the way quality control is done. In an era in which technology has entered everywhere in our lives and especially in the world of work, to check the hams they use a very thin and pointed horse bone: the fibula. A bone that has the characteristic of capturing the smells and releasing them completely in a few seconds. In this way the expert nose of the quality control person can understand if the ham is ready and can immediately move on to check another. Passion and love for their work which, combined with patience for a long wait, make Sebastiano’s cheese special. Taking care of every form personally, he selects the best ones that will be destined for a long maturing in the dairy at Lateis. In fact, it is the weather and the air of Carnia, which makes its mountain cheeses a special and very tasty product. Ageing of malga cheeses in the Lateis dairy. And the beer? That's exactly what we need now. The Sauris craft beer is produced in the brewery of Sandro and Slavica, with barley that they grow themselves. High-quality beer with low fermentation, unfiltered, unpasteurised and without preservatives. Among the various types that can be tasted there are also hemp and smoked beer. I could not help but taste them all! A good experience is to go and taste it directly in the brewery. The right occasion for an enogastronomic visit is certainly the  Sauris Ham Festival, which takes place in July. I do not know about you, but I've already hungry! Happy... tasting, everyone!
