The festival version inspired by the hugely popular TV format will feature three live challenges, pitting a Friulian chef against an Asian chef in the creation of a recipe inspired by Asia but using local ingredients. Three expert judges will offer their technical opinions, but the winner will be decided by the audience, who will have the chance to sample each dish. The events will be hosted by Annalisa Sandri, food blogger at Manca il Sale.
Stefano Basello
Chef of the Il Fogolar 1905 restaurant in Udine and head of “Al Bassotto” in Codroipo, he is known as the “chef with the basket” for his immersive foraging practice in the Carnic Alps. He processed the ecological devastation of Storm Vaia by creating the iconic “Pane del Bosco” (Woodland Bread), made from the bark of felled trees. His philosophy, based on hyper-localism and the deconstruction of kitchen brigades, blends peasant survival techniques with sophisticated neurogastronomic experiences.
Sun Young Koo
Originally from Daegu and resident in Italy for twenty years, she is a chef and teacher who blends the discipline of fashion design with the art of gastronomy through the “Needle & Cooker” project. Former personal chef to the South Korean Consul General and a leading figure in gastrodiplomacy, she promotes therapeutic “five-colour cuisine” and the Yin/Yang balance. Thanks to ingenious hybrids like kimchi arancini and a strong presence in TV, she is a key figure in promoting the Korean Wave in Italy.
