Pecorino yes, but of the Karst

To enjoy a good pecorino there is no need to change region. Just take a trip to the village of Ceroglie, in the province of Trieste. Every morning, a flock of sheep roams noisily on the ciglione (ridge) of the Karst, it belongs to Andrej who holds the reins of the  Antonič farm. This summer the educational farm of the donkey Berto will again welcome many children to allow them to discover the ancient art of herding.  
"Being a shepherd is not easy, you have to win the trust of the flock or they can even lose their milk," says Andrej.
Pecorino cheeses (fresh and aged, produced with vegetable rennet, spices and much more) are receiving ever more important awards. Also on the farm, you can taste cured meats, sausages and sheep sausages, as well as the typical dishes prepared in abundance.

Although refreshments are suspended due to the national emergency of this period, cheeses and other products are available for takeaway and home delivery.

For the Karst and for the courageous people who work on it, I invented the “Dolce Carso” project that is focused on innovating the local confectionery offer in collaboration with farms. Shortly after, under the name of PhotoKras, I began to offer photographic services for tourist and cultural promotion organisations and for local producers in the food sector.
