Capriva del Friuli and its vinegar cellar

In Friuli, rainy days are very common but today it is the first day of autumn. I head towards Capriva del Friuli, a small town in the Collio hills (around Gorizia). Among its rolling hills, we can find beautiful Spessa Castle, dating back to the 13th century, and nearby in the locality of Russiz Superiore, another splendid residence, Villa Russiz. I leave this wonderful panorama to meet Manuela.
You might ask, who is Manuela? A woman with an interesting history.
The fresh air and the smell of the land accompany me to the heart of her small vinegar cellar, where a truly special product is made. I listen attentively to the history of her Organic and Exential Vinegar. And fascinated by all this, the tasting begins.

The first experience is the olfactory one. The smoky smell captivates my senses and brings back memories, when I was a child in my native land of Sicily, sitting on my grandmother's lap near the hearth...
The second experience is the tasting, a strong and distinct flavour but with a smooth aftertaste that reminds me of tastes that can no longer be experienced.
But the tasting doesn't end here.

A set table, with a couple of friends, a glass of wine and a chat, we taste the vinegar in traditional dishes: carpaccio with Exential Fumè vinegar and a risotto creamed with Organic vinegar.

I returned home happy to have had such a wonderful, unusual and enjoyable experience. :)
