The highly anticipated Flavors of the Carso event returns in 2025 to offer a unique culinary experience, showcasing the gastronomic traditions of the Trieste and Gorizia Karst and promoting the creativity of our restaurateurs, producers, and artisans of taste. This year, the central theme is the color orange, a symbol of energy, vitality, and well-being. Orange will be the underlying theme of all dishes and gastronomic experiences, creating a warm, positive, and welcoming atmosphere for all visitors.
The menus for the 2025 edition offer traditional dishes reinterpreted with imagination and innovation, highlighting the authentic flavors of our land. The goal is to rediscover local products: wines, extra virgin olive oils, cheeses, honey, and aromatic herbs, and to promote the culinary heritage of the Carso. Participating bakeries and pastry shops will offer homemade stone-ground bread and traditional pastries, while bars, shops, and wine bars will offer local products in dedicated corners, also available in Flavors of the Carso gift boxes. During the event, nature and food and wine itineraries led by Curiosi di natura will be available, combining the pleasure of taste with discovery of the region.
Special events will be organized at trattorias and in collaboration with the Ubik bookstore in Trieste, to enrich the experience and delve deeper into the gastronomic culture of the Carso.
