Musetto and Brovada

The most renowned Friulian sausage is the Musetto, which represents the essence of the proverb “nothing is thrown away from the pig,” precisely because it is made from a mixture of lean pork, from which it takes its name. With its coarse-grained mixture, perfect texture, and sweet-spicy flavour, its winning and most famous combination is certainly with the sour Brovada, a typical Friulian recipe made with turnips left to ferment for a long time in the marc of red grapes.
