Gorizia Rose Radicchio

One of the crown jewels of the Region, the Rose of Gorizia, a red radicchio similar to a blossoming rose, has been cultivated since the time of the Habsburgs. It has an intense, slightly bitter flavour and is famous for its bright red colour. Its production is limited and painstaking, which is why it is protected by the Slow Food Presidium programme. Harvesting takes place after the first frost in November, when the leaves turn from green to red, moulding the tender heart that makes this radicchio so unique and precious.
