Typical of Carnia, Cjarsòns are among the most iconic dishes of Friuli Venezia Giulia: ravioli filled with ricotta cheese and other seasonal ingredients, with flavours ranging from sweet to strong. Each valley has its own version, with recipes handed down from generation to generation. A symbol of the culinary creativity of the women of Carnia, who used to prepare them with the spices left over by the Cramàrs, humble merchants of fabrics, spices and medicines.
