The name may be misleading, as in Italian, asino means donkey, but this ancient cheese is actually made with cow's milk. What makes it so special? The secret lies in the "Salmuerie" - a unique salting method, carefully preserved through the ages. This artisanal craft, involving wooden vats, has been passed down from one generation to the next. Available in two versions — classic mature and soft fresh — asìn boasts a savoury and piquant flavour, perfect with polenta or in a summer salad.
