The trout in the lost paradise of Caneva

How about some trout for dinner? Impossible to go to Friuli without trying some. In the municipality of Caneva, a few steps from the clear springs of a torrent, we found the paradise lost in a splendid setting.

In this romantic and almost magical atmosphere we found a casual and youthful restaurant, a refined, well-cared-for little place serving trout-based dishes, all absolutely local produce as trouts are farmed in this area.

Trout, which has always been part of the Friulian food tradition, is the protagonist of the specialties that our region offers. The preparations are fabulous. Every dish is well presented and perfectly prepared. Here, the preparation of this freshwater fish is a continuous game of cooking, different temperatures and consistencies. It includes a world of products, from the unexpected to the delicious in a truly unique atmosphere.

In this village in the foothills the catchword is experimentation. New combinations, new flavours, new proposals, a constant research into territorial excellence. Innovation meets the Friulian gastronomic tradition. A healthy, balanced, trout-based cuisine based on trout farmed in pure spring water, trout caught in the morning and prepared in a variety of ways, from finger food to burger, tartar to fillets with flavours and dishes of all kinds.

But best of all is the carpaccio. Together with the trout meatballs combined with a sauce with hints of the Orient.
