White asparagus

It is a little-known fact that in this land embraced by the Alps and caressed by the Adriatic Sea, the most popular variety of asparagus is completely white. The earliest evidence of its cultivation dates back to the second half of the 19th century, and it reached its peak with the first festival in the town of Tavagnacco. The lack of colour is due to the particular method of growing it underground, which also gives it its typical tender and succulent characteristics.
