The olive tree in Friuli Venezia Giulia has faced climatic and historical challenges, but since the 1950s it has regained momentum. Today, the extra virgin olive oil of Trieste enjoys the “Tergeste” Protected Designation of Origin. Among the local varieties, Bianchera is the most renowned, known for its resistance to cold weather (and the Bora winds) as well as for its late harvest period. This oil, rich in antioxidants, features a yellow hue with green reflections, with fruity notes of fresh grass, almond and apple, and is perfect for any regional dish.
