Sarde in Saôr is an iconic dish of Friulian tradition, created in the 14th century to preserve fish during long sea voyages. Made with fried sardines, sweet and sour onions, pine nuts and sultanas, this cold starter is now a symbol of regional cuisine. The recipe calls for the dish to be left to rest for a day or two, which enhances the flavours and makes it perfect to be served with a good local white wine, such as Malvasia Istriana.
