Radìc di mont

When the snow disappears in Carnia, in May, the Radìc di Mont is harvested, a purple wild radicchio of unique tenderness. This delicious vegetable is picked by hand, without removing the roots, and preserved in oil so that it can be eaten all year round. It is the perfect accompaniment to meats and cold cuts such as prosciutto or Sauris ham. The Slow Food Presidium programme protects its tradition and guarantees sustainable harvesting, thus preserving this gastronomic treasure.
