Latteria Cheese

The Turnaria dairy operates a unique, cost-effective system of milk production, involving small communities in a fascinating blend of tradition and cooperation. Unlike social dairies, Turnaria houses do not purchase milk from external suppliers but use the milk of their members. This practice, which has almost disappeared, survives in a few dairies that produce “Latteria,” a raw milk cheese protected by the Slow Food Presidium programme.
