Gubana

Gubana represents the sweet treasure of Eastern Friuli. This snail-shaped masterpiece, created in the 1400s, intertwines leavened dough and dried fruit in an embrace of flavours. Its name, from the Slovenian “gubati” (to fold), reveals the complexity of its preparation. The queen of the holiday season, it requires two types of dough and patient craftsmanship. And let's not forget its single-serving version: the Strucco. A delicious stuffed bundle, fried, baked or boiled.
