Boreto alla Graisana is a simple but very tasty dish, typical of the rustic cuisine of the territory of the Grado Lagoon. According to tradition, this dish was prepared by the local fishermen: the best catch was taken daily by the "batelante," the boat that went around the small islands of the Lagoon and sold it at the market in Grado, while the unwanted fish were eaten by the "casoner" and his family. In the case of particularly fatty fish, such as eel or turbot, vinegar is also added to balance the flavours. A humble and authentic dish, today the pride of the City of the Sun.
