This historic acetaia is recognized in the Guinness World Records as the largest in the world, where the combination of history and innovation gives rise to Asperum balsamic vinegar. This exquisite condiment is the result of ancient traditions and an artisanal process that uses Refosco and Friulano Friulian grapes, carefully aged in small wooden barrels.

Since 1998, Acetaia Midolini has been carrying forward the legacy of Lino Midolini, its visionary founder, Guinness World Record holder, and guardian of a unique gastronomic heritage.
