Tasting itineraries on a plateau suspended above the sea

The Carso is a harsh and fascinating headland dotted with little stone hamlets with a marvellous view over the blue sea. This is where the bora wind and light Mediterranean breezes blow, white limestone rocks mingle with red doline and broad expanses of greenery. In the Carso you can visit the Grotta Gigante at Sgonico, the largest tourist cave in the world, discover a special ruralism, suspended between Italy and Slovenia, as in the eighteenth century Carso house of Rupingrande, go to a holiday farm and typical "osmizze", kind of inns marked by bushes hanging along the road. And then taste the delicious typical products created here alone.

Wines
This red land, rich in iron and limestone and caressed by the nearby sea, has for centuries been the source of not only wines like Sauvignon and Chardonnay, but also native varieties like Terrano, with its ruby red colour and the fragrance of wild berries, Vitovska, a fine and elegant white wine and Malvasia with its dry, crisp taste.

Cheeses
The Carso produces cow, sheep and goat's milk cheeses. The names are curious and the flavour is strong: there is Tabor, which tradition associates with the Austro-Hungarian period and Jamar, which is matured for at least four months at the bottom of a Carso cave. Without neglecting the cheeses enhanced with wild fennel or summer savory (zepek), which grows wild on the plateau.

Tergeste extra virgin olive oil
The D.O.P. Tergeste oil comes from the terraces overlooking the sea, where the climate is milder and the trees receive all the warmth of the sun.

Honey
The Carso also has tasty native honeys: acacia, lime tree and honeydew honeys, cherry honey (from the typical local tree known as St. Lucie cherry) and Carso polyfloral honey.

Karst raw ham
Dark, tasty and with a strong personality, it is flavoured with garlic, bay leaves and rosemary.
